If he pulled you over while you were driving, as opposed to idling at a light, you'll need to get an measurement of the engine under load. Easiest way for that would be on a dyno. Idle and under load are two different levels of sound, as you know, and the judge probably knows.

This can still be done with a SPL meter, set to A-weighting, performed by a neutral party (I guess that would be your referee).

I would point out the mistakes on the citation, but wouldn't pick apart the officers character. That won't get you too far. Obviously dressing and acting professionally goes a long way in court as well.
